I am so blessed to have a husband who is so easy to please with food. He will pretty much eat whatever I cook. He recently purchased an extra large T-fal skillet…really nice….to try his hand at cooking. I had not used it more than a time or two. Tonight I cooked pan seared flounder filets. I put a salad and small red potatoes with it. He said given a choice of steak, pizza, or fish, he’d take fish every time! I had not realized he was so fond of fish! I said, “It must be the new skillet.” He said, “I think it’s the skillet operator.” Ha ha!

I don’t get home until 12:30 or 1pm from church by the time I say goodbyes, get all of my stuff to the car, and get everyone settled for whom I am responsible. Also, I don’t always plan Sunday lunches. Many times Bill eats before I get home. We have leftovers or a salad with whatever happens to be on hand. But this weekend I actually planned. When I got home at 12:50, the smell of a slow cooked rump roast hit me at the door. Bill had put the yellow squash casserole in the oven for me. I thickened the au jus gravy and cooked some rice. We had celery sticks and cucumber slices with homemade pimento cheese spread. And I brewed decaf iced tea. Ymmmmm. Bill said, “Could we do this at least once a month?” Guess I need to plan more often. Two happy dogs licked the plates. I think I’ll take a nap.
